1 medium, ripe banana
2 tablespoons nut butter
1/2 cup fresh strawberries, sliced
1. In a medium bowl, mash banana very well until nearly lump-free, then whisk in eggs (or use a blender).
2. Coat a medium nonstick pan with cooking spray and heat over medium. Reduce to low and pour in half the batter. Cook for 1-2 minutes, then carefully flip and cook until golden.
Remove to a plate.
3. Drizzle with nut butter, lay down strawberries, roll and serve.
